An emulsion is a dispersion of two liquids that normally don’t mix together (e.g. water and oil) These two liquids do not mix with one another when we try to make them do so. They disperse the liquids into small, rapid-moving droplets which allows for a smooth mixing. This is crucial, as for much of what we consume or apply to body surfaces, a smooth blend is usually required.

Then, when we stir or shake the liquids together, it may not yield the same mixture with each attempt. It could be different results at times and it can also be perplexing.
